i just love my birthday

so just because i can’t celebrate my birthday with some beers {per usual} doesn’t mean that i can’t enjoy a wonderfully delicious guinness beer cake!! recipe compliments of lola alwin. it didn’t turn out quite as pretty as yours lola but it was still SUPER YUMMY!! and no mom, i’m not hungover from my cake 🙂 happy birthday to meeeee!

Guinness Cake with Guinness Frosting {YUM}

Makes 12 servings

You’ll need about 2 bottles of Guinness Extra Stout Beer for this recipe

2 packages Betty Crocker Gingerbread Cake & Cookie Mix

2 large eggs

2 ¾ cups Guinness Extra Stout beer (2 ½ cups for cake and ¼ cup for frosting)

½ cup butter, softened

1 16 oz. package powdered sugar

 

1. Stir together gingerbread cake mix, eggs, and 2 ½ cups stout beer in a large bowl until combined. Pour batter evenly into 2 lightly greased 9 inch round pans or 8 inch square pans.

2. Bake at 350 degrees for 35 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on a wire rack 10 minutes. Remove from pans, and let cool on wire rack 1 hour or until completely cool.

3. Beat softened butter at medium speed with an electric mixer until creamy. Gradually add powdered sugar and remaining ¼ cup beer, beating until blended after each addition. Beat 1 minute or until light and fluffy.

4. Spread stout buttercream between layers and on top of cake.

Hints from Lola cause she’s made this cake a lot: Gingerbread mix is often lumpy so it’s much easier to mix ingredients if you get the lumps out before adding the beer and eggs (I do this by hand). Guinness is very foamy which makes it hard to measure in a measuring cup unless you pour it VERY slowly down the side to avoid most of the foam. Be sure you just frost between the layers & on top, there’s not enough to do the sides.
